Seafood Casserole

I love food and I love seafood, but I love seafood casserole the most!


It is special because of when we eat it, but it is the tastiest seafood meal I have ever had, hands down!

SEAFOOD CASSEROLE

2 cups chopped onion                                 
½ lb light cheddar cheese, grated
3 cups chopped celery                                  
2 large cans of lobster (knuckles and claws) or fish if in season
1 ½ tbsp margarine                                
3-4 lbs scallops
½ tsp pepper                                             
3 lb crab (I use imitation crab)
½ cup margarine                               
3 lbs shrimp
¾ cup flour                                                
Slices light mozzarella cheese (or grated light mozzarella cheese)
3 cups milk

v  Sauté onions and celery in 1½ tbsp margarine. Add salt and pepper.
v  In a big pot – Melt ½ cup margarine: add flour, milk and shredded light cheddar cheese.
v  Cook until cheese is melted and mixture is thickened.
v  In a large roasting pan, layer lobster, scallops, crab and shrimp.
v  Then add thickened mixture over top.
v  Bake covered at 350F for approx. 1 hour–then add light mozzarella cheese slices on top.
v  Put back in oven uncovered – bake until golden brown.
v  Serve over cooked white, whole wheat or whole grain rice.


Serves 15 people

Chef’s Tip: Make it the day before for an even fishier taste (similar to seafood chowder) and save a bowl for the next day to mix in with your scrambled eggs for a delightfully fishy breakfast.

    This sounds SO delicious! We're so lucky to have access to so much seafood on the east coast! I can't wait to make this!
