I love food and I love seafood, but I love seafood casserole the most!
It is special because of when we eat it, but it is the tastiest seafood meal I have ever had, hands down!
SEAFOOD CASSEROLE
2 cups chopped onion
½ lb light cheddar cheese, grated
3 cups chopped celery
2 large cans of lobster (knuckles and claws) or fish if in
season
1 ½ tbsp margarine
3-4 lbs scallops
½ tsp pepper
3 lb crab (I use imitation crab)
½ cup margarine
3 lbs shrimp
¾ cup flour
Slices light mozzarella cheese (or grated light mozzarella
cheese)
3 cups milk

Sauté onions and celery in 1½ tbsp margarine.
Add salt and pepper.

In a big pot – Melt ½ cup margarine: add flour,
milk and shredded light cheddar cheese.

Cook until cheese is melted and mixture is
thickened.

In a large roasting pan, layer lobster,
scallops, crab and shrimp.

Then add thickened mixture over top.

Bake covered at 350F for approx. 1 hour–then add light mozzarella cheese slices on top.

Put back in oven uncovered – bake until golden
brown.

Serve over cooked white, whole wheat or whole
grain rice.
Serves 15 people
Chef’s Tip: Make it the day before for an even fishier taste (similar to seafood chowder) and save a bowl for the next day to mix in with your scrambled eggs for a delightfully fishy breakfast.
