Pineapples have to be one of the happiest foods – I mean, they wear a crown, are sweet and are bright enough to light up a room or any fruit salad for that matter.
When planning my sister-in-law’s baby shower in the middle of a global pandemic it really brought party planning to a whole new level. There were so many different things to consider like spacing between people, air-flow, masks, hand sanitizer and individually portioned food.
I always love using the food buffet table as a focal point for decorations during a party since it doubles as useful and beautiful. Coming up with ways to still have a beautiful food table without the “store bought wrappers” was a bit of a challenge, but I think we nailed it with the perfect amount of store bought and homemade while still keeping everything in individual portions to avoid any cross contamination.
My sister-in-law loves hawaiian pizza and I knew she would like cake so I took inspiration from both and decided on Pineapple Angel Food Cake with whipped cream.
I take any chance I get to use mason jars on a buffet table since they make everything a little more fun, they are easy to decorate and the lids make preparing something the night before even easier. Decorating the jars for this woodland themed baby shower was a lot of fun. I used some jute rope I had on hand, bamboo spoons and a small piece of fake greenery.

- Mix together 1 box of Angel Food Cake Mix and 1 can of crushed pineapple
- Bake per box instructions
- When the cake cooled I cut it up using my favorite mini nylon spatula and put the cake in the mason jars using tongs
- I then put the covers on the jars and left them on the counter for the night
- Add cool whip before serving
Before serving I removed the covers and added cool whip using the aerosol can. I would recommend using cool whip in a piping bag if you have one to avoid the “spray” affect of the aerosol can. You could also spoon cool whip in the jars. However you choose to do it, it will work!
