Rhubarb Muffins

Ingredients
  

  • 1 1/2 cup flour
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1 egg
  • 1/2 cup vegeatable oil
  • 1 1/4 cup brown sugar
  • 1 1/4 cup buttermilk
  • 1 tsp vanilla
  • 1 1/2 cup diced rhubarb
Topping
  • 1/2 cup quick oats
  • 1/2 cup brown sugar
  • 1/2 cup melted butter
  • 1/4 tsp cinnamon
  • 1/2 tsp ginger

Method
 

  1. Mix muffin ingredients together in a medium size mixing bowl combining wet ingredients and adding in dry ingredients one at a time.
  2. Preheat the oven to 375 degrees
  3. Mix together topping ingredients in a seperate bowl.
  4. Pour muffin batter in a greased or non stick muffin pan
  5. Add the topping mixture over each muffin prior to baking
  6. Bake at 375 degrees for 20-25 minutes
