There are people that come into your life at different stages and sometimes you never really know why. Brenda Lee is one of those people. I am best friends with her nieces (twin girls) and have been for years but Aunt Brenda didn’t live in our town so I had the opportunity to meet her at important family gatherings. You know, like High School graduation, wedding showers, baby showers, weddings, etc. She has always been very special to the girls so by default became special to me. Over the past few years I have had the opportunity to meet Brenda Lee a few more times in a variety of circumstances, but can now fully comprehend why she has always been so special to the girls.
Lucky for me when I posted about my two little ones bringing home all kinds of rhubarb on Instagram one of the recipes I received was “Rhubarb Muffin Recipe by Brenda Lee”.
Of course, I had to try the recipe!
I’ll be honest, when I read the recipe I wasn’t really sure if the topping was supposed to be added before or after baking… I put it on before because of the oats, and I was correct (I think). Whatever you do – don’t skip the topping, it really makes the rhubarb muffins extra special!

Rhubarb Muffins
Ingredients
- 1 1/2 cup flour
- 1 cup whole wheat flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 1 egg
- 1/2 cup vegeatable oil
- 1 1/4 cup brown sugar
- 1 1/4 cup buttermilk
- 1 tsp vanilla
- 1 1/2 cup diced rhubarb
Topping
- 1/2 cup quick oats
- 1/2 cup brown sugar
- 1/2 cup melted butter
- 1/4 tsp cinnamon
- 1/2 tsp ginger
Instructions
- Mix muffin ingredients together in a medium size mixing bowl combining wet ingredients and adding in dry ingredients one at a time.
- Preheat the oven to 375 degrees
- Mix together topping ingredients in a seperate bowl.
- Pour muffin batter in a greased or non stick muffin pan
- Add the topping mixture over each muffin prior to baking
- Bake at 375 degrees for 20-25 minutes
