Peanut Butter Coconut Snowballs
Ingredients
Peanut Butter Balls
- 1 cup peanut butter I use Kraft Light Peanut Butter
- 1 cup icing sugar
- 1 cup Rice Krispies
- 1 tbsp butter
Snowball Coating
- 1 cup icing sugar
- 3 tbsp water
- 1 1/2 cup coconut sweetened, medium desiccated
Instructions
Peanut Butter Balls
- Cream peanut butter and icing sugar until smooth.
- Mix in rice krispies and butter.
- Shape mixture into balls using a small scoop
Snowball Coating
- Mix 1 cup icing sugar and 3 tbsp water together in a bowl.
- Pour coconut into a separate bowl.
- Dip peanut butter balls into icing sugar mixture covering them and then roll in the coconut. Do this with each peanut butter ball, one at a time.
- Place peanut butter snowballs to set in the fridge for at least 15 minutes before serving.
