Peanut Butter Pudding Popsicles

Anything that tastes like a treat but is an acceptable breakfast food is a winning recipe in my books! These peanut butter pudding popsicles have been a favourite for a long time and yet I forgot about them until re-reading my popsicle round up post recently for some summer popsicle inspiration.

Not only are these peanut butter pudding popsicles delicious, simple and satisfying, they are made with 4 ingredients you likely have on hand. My mom and sister-in-law make these popsicles quite often as well. We all make them a bit differently with a variation of similar ingredients.

Honey can be easily substituted for the maple syrup, use more plain greek yogurt for more tart popsicle or more vanilla for a sweeter flavour. Similarly with the peanut butter you can swap it out entirely for the nut butter of your choice (my mom uses almond butter in her version) or change the style of peanut butter. I always use Kraft Light Peanut Butter because that is what I keep in my pantry, but natural peanut butter and flavoured versions would all work just as well. 

Delicious and Simple Peanut Butter Popsicles

The recipe is equally good without even going through the trouble of freezing. Just as the name suggests, it can be enjoyed immediately after mixing as peanut butter pudding. I am not a huge pudding fan so never opt for this option, but I can see it being a good way to get some protein and nutrients into a toddler or satisfying the impatient pudding loving family member in your household.

Ingredients
  

  • 1/4 cup Plain Greek Yogurt
  • 1/2 cup Vanilla Yogurt
  • 1 tbsp Kraft Light Peanut Butter Make your tbsp heaping 😉
  • 2.5 tsp Maple Syrup

Method
 

  1. Mix all ingredients together.
    Serve as pudding or put in popsicle molds and freeze to make a frozen treat.
